Inspiration Day Sustainable Hospitality – Estonia: MAD Academy
We invite colleagues in the restaurant and hospitality sector to the Inspiration Day, which is conducted by the MAD Academy from Copenhagen! Specially organized for the Estonian hospitality community, the day offers knowledge, tools and inspiration for environmentally sustainable business activities for company owners, CEOs, chefs and professionals. When we leave the inspiration day, we will have a deeper understanding of the global challenges facing the guest economy and other business sectors, and we will have practical knowledge with which to take immediate action using our position in the food system to act for the benefit of the planet.
The MAD Academy helps raise awareness and navigate our work around issues such as biodiversity loss, natural resources and carbon emissions. This is the first time that the MAD Academy team brings their practical experience and skills as world-class trainers to Estonia. The day will end with a presentation by Douglas McMaster, a lecturer at the Academy and head chef of the zero-waste restaurant Silo London.
At the end of the day, participants have a framework to immediately reduce their environmental impact and improve their business overall. Morning sessions highlight the connection between food and climate and introduce ways to reduce and avoid harm by choosing what we grow and how we eat. From a unique perspective, attendees will hear how we can transform our understanding of nature and redefine our relationships with suppliers through foraging. In the afternoon, MAD and Chef Douglas McMaster will present examples of how they and others are already making a difference. The entire program is in English!
